A little late with last weeks finds but there were so many delicious items!
Scallions - I love scallions and they are super easy to incorporate into meals. I like to dice and saute them before adding a protein to the pan. They are also great sliced and put in with tacos! I also used them to make egg wraps for breakfast!
Buttercrunch Lettuce - This week's lettuce is going into making a yummy salad along with the japanese salad turnips!
Boston Lettuce - I am using this lettuce for lettuce wraps. They are quick and easy to make which is perfect for those busy weeknight meals!
Bok Choy - This is the most perfect ingredient for a stir fry. You could do beef or chicken or shrimp would be fantastic!
Parsley - I put half of the parsley right in a ziplock bag into the freezer. It is perfect for those yummy winter soups so I want to save some. The rest I will use to make mini meatballs to put on top of our pesto pizzas!
Red Beets - I like to roast them long enough to help peel them easier. Then I dice them and put them in the air fryer! I made beet bowls this week with chicken, almonds, beets, quinoa, and lettuce
Sugarloaf Chicory - Stir fry all the way! And I just bought a new wok so this was a perfect find!
Japanese Salad Turnips - These we will be putting in a delicious salad
Happy Saturday! I wanted to hop by and give you this important message for this weekend because I hear a lot of this going around!
Do not punish yourself with exercise. When you get into that mindset you will start resenting working out because you will associate it with something negative rather than all the positive it brings.
I totally get not wanting to lose your progress but it is not going to happen with one meal or in one day or really one weekend!
If you can relate to this I want you to do this...
Each morning when you get up be intentional about how you will show up that day. Will you do your workout? Will you focus on your nutrition? Will you go to the party and have one margarita and then seltzer? Pick your one way to show up and stick to it and let the rest happen. Remember this is for a day, not every single day. One day letting yourself eat outside your plan is going to be ok!
