Garlic Scapes - I have been waiting all year for these! This was the base of my original Basil Pistachio Pesto recipe and I CANNOT wait to make it this year again!
Baby Red Romaine Lettuce - I love getting fresh lettuce each week because it makes weekend lunches so easy to prep. We used this to make a delicious salad to go with our burgers!
Boston Lettuce - I used this lettuce in my weekly meal prep. This week I prepared Lemon Pepper Chicken thighs and set on top of the beautiful lettuce. I added some shredded carrots to the mix and topped with a citrus vinaigrette. It was a fantastic lunch!
Red Radishes - We had a BBQ this week and these radishes were a great add into a fruit salsa with mangos and strawberries! It goes great on top of chicken or with shrimp tacos!
Arugula - I feel like arugula is a lettuce not everyone loves and honestly I didn’t always love it. This time around I used it as a base for a shrimp bowl. I added avocado, grilled shrimp, and the mango strawberry salsa with the radishes! It was so good!
Purple Kale - Purple kale was a new one for me. Some kale I use for smoothies while other I love to saute with chicken. This one I decided to use in a salad! I mixed it with quinoa, chicken, almonds, and cranberries! I also used some of it in a frittata with zucchini and feta cheese. It was SO good!
Collards - Any time I see collards pop up I grab them for wraps because it is my absolute favorite thing to do! I find regular lettuce is sometimes hard to use for wraps but collards work so well!
Happy Saturday! I wanted to hop by and give you this important message for this weekend because I hear a lot of this going around!
Do not punish yourself with exercise. When you get into that mindset you will start resenting working out because you will associate it with something negative rather than all the positive it brings.
I totally get not wanting to lose your progress but it is not going to happen with one meal or in one day or really one weekend!
If you can relate to this I want you to do this...
Each morning when you get up be intentional about how you will show up that day. Will you do your workout? Will you focus on your nutrition? Will you go to the party and have one margarita and then seltzer? Pick your one way to show up and stick to it and let the rest happen. Remember this is for a day, not every single day. One day letting yourself eat outside your plan is going to be ok!
