I belong to a local CSA, Community Supported Agriculture, from an organic farm. From this I get weekly baskets of vegetables that were just harvested. Many things we get are also found in a farmers market and so I wanted to share the experience with you.
I highly recommend you look for a local CSA by you or visit a farmers market to buy your produce!
These were our week 1 veggies and how I was able to incorporate them into our weekly menu!
French Breakfast Radishes - They have a kick for sure. My 4 year old likes to just eat them raw like an apple while the raw flavor is a little much for my 6 year old. I am using them this week for my breakfast meal prep. I am making a Frittata using the Breakfast Radishes and the tops of the Japanese Salad Turnips. You can for sure sub in spinach instead of the Salad Turnip tops!
Bunching Broccoli - This is another variety of broccoli and it is similar to broccolini and they are incredible! This was the first thing we used when we got our basket of goodies! I sauteed them in olive oil and fresh garlic with salt. Quick and easy and fantastic! They were gone in the first few minutes and barely made it to the table!
Collards - My absolute favorite way to make collards is to make wraps. You have to submerge them in boiling water for about 30 seconds and then transfer to an ice bath. It is a quick process and makes them so perfect for whatever wrap you are putting together! My favorite is bbq chicken with shredded carrots and avocado!
Japanese Salad Turnips - We love snacking on these. They are amazing with hummus and we cut them into slices and dig in! They would be a great addition to a salad since they have a great crunch!
Baby Bok Choy - I have been dreaming of these baby bok choy since I got them last year. They are incredible! I slice them really thin and make a beef and bok choy stir fry and serve over rice. My favorite is using beef with them but my kids prefer chicken but either way they still love the bok choy!
Red Kale - I went smoothies for sure! I make a fruit smoothie on my way out the door every morning and I always add a veggie to it. Usually I do spinach or frozen rice cauliflower (don’t knock it till ya try it lol) but since I had this beautiful kale I used it! I cut it up and divide it up into little ziplock bags with frozen fruit and keep in the freezer. That way I can just pull it out and blend when I’m ready!
Boston Lettuce -This is probably my favorite variety of lettuce and I always have a hard time deciding how I want to eat it lol It is perfect for a salad but I think my favorite is to use them as lettuce cups. We used the leaves as little cups and added taco meat with chopped carrots, peppers, and avocado. My kids added sour cream and cheese!
Happy Saturday! I wanted to hop by and give you this important message for this weekend because I hear a lot of this going around!
Do not punish yourself with exercise. When you get into that mindset you will start resenting working out because you will associate it with something negative rather than all the positive it brings.
I totally get not wanting to lose your progress but it is not going to happen with one meal or in one day or really one weekend!
If you can relate to this I want you to do this...
Each morning when you get up be intentional about how you will show up that day. Will you do your workout? Will you focus on your nutrition? Will you go to the party and have one margarita and then seltzer? Pick your one way to show up and stick to it and let the rest happen. Remember this is for a day, not every single day. One day letting yourself eat outside your plan is going to be ok!
Have fun and make good memories, and please be safe! Uber is a fantastic ...
