This marinade is the perfect taste for summer salads! I used it with shrimp here but it would be fantastic with chicken also so if shrimp isn't your thing you can definitely sub chicken here.
I used the creamy balsamic vinaigrette with mine. The balsamic flavor went really well with the lemongrass flavor!

The weather is supposed to be beautiful and very Spring like next week and I love doing salads in Spring.
You can serve with whatever dressing you wish but I highly recommend the Lemon Balsamic Vinaigrette. It goes really well with the coconut chicken. When you are buying a dressing make sure you look at the added sugar. You do not need added sugar in dressing!

I always try and incorporate some kind of seafood a few times a week. If you are having a hard time finding good seafood don’t forget about the seafood bundle from Thrive Market! You can choose what goes in it and the quality is really good!

When I am shopping for BBQ sauce I try and find one with no added sugar or at least a small amount. Also try and avoid any artificial sweetener. I will be working on some homemade recipes soon so stay tuned!

I have been trying to create a great turkey burger and this is my favorite one! It is classic and simple. I avoid gluten so adding breadcrumbs wasn’t an option so for this I went for almond flour and the consistency was great and they did not stick to the grill at all!
The zucchini is a perfect addition to any summer meal. This is my favorite way to prepare it and it is also a huge hit with my kids, which is always a plus!

Love this family favorite on a Sunday! It is a quick and easy meal and weekends in the Spring definitely need quick and easy!
Happy Saturday! I wanted to hop by and give you this important message for this weekend because I hear a lot of this going around!
Do not punish yourself with exercise. When you get into that mindset you will start resenting working out because you will associate it with something negative rather than all the positive it brings.
I totally get not wanting to lose your progress but it is not going to happen with one meal or in one day or really one weekend!
If you can relate to this I want you to do this...
Each morning when you get up be intentional about how you will show up that day. Will you do your workout? Will you focus on your nutrition? Will you go to the party and have one margarita and then seltzer? Pick your one way to show up and stick to it and let the rest happen. Remember this is for a day, not every single day. One day letting yourself eat outside your plan is going to be ok!
